Local Stores That Sell The Best Whole Grain Flour For Baking At Home (Jenifer Whitmire)

Many people are wondering which is the best whole grain flour for baking. This is an important question as the type of ingredients used all have very different health benefits. In recent years more and more people have been making the switch to healthier and more natural alternatives.

In the past few years there has been growing concern about the amounts of chemicals and pesticides in our food. This is thought to be having a profound and long term effect of people. Many families are making a conscious decision to switch to more healthy and natural options. This includes the flour they use to bake bread and cakes. Bread is a staple food in practically every home and it can provide a significant source of nutrition.

Healthy grains also help to keep blood sugar at consistent levels. Many processed foods contain a lot of salt and sugars. This causes sudden spikes in blood sugar followed by significant dips. This often leaves the person craving more sugar. The cycle is constant and quite hard to break. A knowledge of the problem and recognizing feelings of a sugar craving are an important step in combating this problem.

Baking fresh bread with organic ingredients is a real treat for the entire family. It is also the perfect way to get the children involved in cooking. They can have a great time measuring out the flour and other ingredients. Kneading the dough is a job that can be shared. Everyone can have a turn at working with the dough and helping to make each loaf. There is also a great lesson in chemistry as parents can explain the chemical reactions that help the bread to rise.

Many people are trying to eliminate gluten from their diet. Some people have a serious intolerance to it, whilst others just see it as an unnecessary part of their life. Whatever the reason it is quite possible to live a very healthy life without gluten. The ancient grains, particularly spelt, are seen a growing popularity as people realise just how tasty they are. Many people are only to happy to make this quick and easy substitution.

There is a surprising amount to learn about the many types of flour. The hard red spring and winter wheat are good for no knead yeast breads. The ancient grains such as spelt are really seeing an increase in popularity as more and more people discover their delicious taste and amazing health benefits.

In the past few years there has been a lot of publicity about the dangers of chemicals and pesticides in our food. Many families are making the decision to spend a little extra on organic produce. This is a very wise choice as certified organic foods have been grown without the addition of any chemicals.

Those with young children in the home need to be especially careful about the quality and origins of their food. People can no longer trust the labels to be completely honest about the contents and growing conditions of the item. Finding a supplier of the best whole grain flour for baking is a great way to protect the entire family.

Recipe - Apple Cinnamon muffins

I had been itching and craving to bake. And bake I did - started with these oh-so-cute apple cinnamon muffins :)

Found the recipe in a magazine borrowed from the library. Reproducing it here -

For 12 regular-sized muffins:
- 2 medium apples (about 250 gms each) - you can use any apples you have on hand but you'll get the best flavour when you choose a 'tangy' variety such as Granny Smith or Braeburn. [ I used whatever was available at home]
- 1 cup plain (unsweetened) yoghurt
- 1/4 cup canola oil
- 1 large egg
- 1 cup sugar
- 2 cups self-raising floor
- 1/2 cup chopped walnuts [Didn't have these so skipped them, but would be nice for some texture]
- 2 tsp cinnamon
- 1/2 tsp salt

I used unbleached self raising flour - unbleached means well: not bleached flour.  Bleaching is done in order to whiten flour and to to give it more gluten forming properties. Organic peroxides are used as beaching agents for flour.
For the sugar I used brown sugar.
And I used sea salt flakes for the salt part.

1. Turn the oven to 190 C (or 180 C if using fan-bake)
2. Grate the unpeeled apples (discarding the cores). Place the grated apple, yoghurt, oil and egg in a large bowl and mix well.
3. Measure all the remaining ingredients into another bowl and stir well with a fork. Tip the dry mixture into the wet ingredients, and gently fold together until the flour is just moistened. (Avoid over-mixing as this will toughen the finished muffins. It doesn't matter if the mixture looks a little marbled, this looks quite good in the finished muffins.

4. Spray 12 regular sized muffin pans with non-stick spray, then divide the mixture evenly between them. Bake for 12 - 15 minutes or until the muffins are golden brown on top and spring back when pressed lightly in their centres.

[I used paper muffin cups instead of directly putting the batter into the muffin tray. Easier to peel off and eat the muffins and to clean the tray! :) ]

5. Leave muffins to cool in their pans for 2-3 minutes, then tip out and cool on a rack. Place cool muffins in a plastic bag, freezing any you don't expect to eat within 48 hours.

I halved the recipe because I wanted to make 12 mini muffins and not the regular sized ones. My cooking theory has become "small is beautiful".
But I could have, actually, should have added just a bit more flour - more than the halved version. The muffins were a bit more moist than I would have liked them to be.

Cookies and Salsa

I get the inspiration to cook like the monsoons in Bangalore. Somedays there is nothing - zilch, a very dry spell. Whatever the cook makes, we shall eat.  And on other days there are heavy showers of motivation and an intense desire to cook something. Last week we had one of those heavy shower days and the after effect was very pleasant and mouthwatering.
And I started watching Nigella Kitchen recently so am inspired all the more :) Cheers for Nigella Lawson, the hot sexy mama who cooks awesome food.

I collected some of these beautiful coloured veggies and roasted them in the oven.

I added these for some tangy yummy flavours.

Pulsed them in the mixer and made this hot tangy roasted tomato and capsicum salsa.

What's salsa without some nachos? Umm, yumm and like N says "Yummy in my tummy" combo.

But that couldn't satisfy my sweet tooth. So, I took these ingredients (in pic below) along with some butter and sugar.

And made these simple, flavourful and melt-in-your-mouth cookies.

If you need exact recipes or process, let me know, will share.

Happy Monday!!

Edited to Add - Here is the recipe link for the cookies (It is by Rachel Allen) - http://www.lifestylefood.com.au/recipes/8947/basic-cookie-recipe
I modified the basic version, slightly, by adding Hersheys cocoa powder and reducing the amount of plain flour to accomodate the cocoa powder. You can go light or dark based on taste and colour preference. I added some crushed walnuts too. And ofcourse I did not want to make 35 cookies, just a trial sized amount so I reduced the quantities by 1/4.

Happy Baking!
The salsa was as simple as the pictures show - just roast/grill the veggies (tomato, onion, capsicum, green chilli (as hot as you want) and garlic) in the oven/microwave (use grill mode). Then blend them along with the coriander, lemon juice, salt and some cumin seeds. Now dig in with some nachos (for the ideal combo) or some chips :)

Easy and Quick Banana Walnut Muffins

Of all the different areas under cooking I love baking the most. Regular daily cooking doesn't excite me, at all. But cooking for parties, making snacks or sides or baking gets me into action big time!
Ever since we have moved back to India from the US I have been slow on the baking front thanks to the lack of a good oven. But amongst one of the few things I have managed to bake are these banana walnut muffins.
These are the easiest, awesome-est, quickest and yummy-est muffins ever (apart from blueberry muffins maybe).

I had stumbled on the recipe at Saffron Hut long time back. I love her recipes and have tried my hand at a lot of them.

Here is the recipe that I use (I made some changes)! This makes 12 regular size muffins.
Enjoy eating these.

Ingredients:
3 ripe regular size bananas - the riper they are the better
3/4 cup sugar (powdered sugar works best)
1/3 cup melted butter (unsalted)
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 1/2 cups of flour (all purpose/maida)
1 tsp of vanilla essence
1/2 cup of walnuts, chopped/crushed

Method:

Preheat oven to 375 degrees F or 200 degrees C.
Chop/crush walnuts.
Line muffin pan with muffin paper cups (I use the re-usable silicon muffin mould in my microwave convection oven).
Mash bananas well in a bowl.
Add sugar and melted butter.
Add the vanilla essence.
Sift the dry ingredients one by one into the sugar, butter, banana mixture.
Add some of the chopped walnuts leaving a few to garnish.
Mix just enough using a spatula to bring everything together.
Fill muffin cups about 3/4 to the top.
Sprinkle with remaining chopped walnuts.
Bake for 20 minutes or till the muffins are golden brown (the batch in the pictures above turned a tad browner than usual but they were still yummy inside).
