How To Make Great Dessert - Italian Biscotti Recipe (rajiv tiwari)

Italians are known for their delicious cuisine and this biscotti recipe is a great example! Make the yummy dish in your own home and enjoy the great dessert!

Ingredients:

* 1 ? tablespoons unsalted butter
* ? cup plus 1 tablespoon sugar
* Grated zest of ? orange
* 1 large egg
* 1 cup all-purpose flour
* 4 tablespoons cocoa powder
* ? teaspoon baking soda
* ? teaspoon baking powder
* Pinch of salt
* ? tablespoon aniseed
* ? cup shelled pistachios, toasted
* ? cup hazelnuts, toasted

Directions:
1. Your biscotti recipe needs to be baked just right to be perfect. To make sure of that place your baking rack in the centre of oven and preheat the oven to 180? C.

2. Line a baking sheet with parchment paper.

3. Mix the butter, sugar, and orange zest in a large bowl. Beat in the eggs, gradually and one by one until thoroughly mixed. You can even use a blender for this part of the recipe if required.

4. In another bowl, whisk together the flour, cocoa powder, baking soda, baking powder, salt, and aniseed till it's completely mixed. Make sure there are no lumps in the mixture or your biscotti recipe won't taste that great.


5. Add the dry ingredients to the mixture with butter and beat in the processor until the ingredients are a little combined.

6. Add in the pistachios and hazelnuts and beat again everything is well mixed.

7. Flour you're a clean work surface, slightly and put the dough to it.

8. Roll the dough into a log 6 inches long and slightly press down on it to flatten the top. For your biscotti recipe to be traditionally long, this is an important step.

9. Bake the recipe for about 45 minutes. The biscotti should feel firm and done when you press the top. Remove it from the oven and let it cool for a while on the baking sheet itself. Do not turn off the oven.

10. Using a knife, cut the biscotti recipe diagonally into ? inch slices.

11. Overturn and place the slices back on the baking sheet and bake for 15 minutes.

12. Remove from the oven. The biscotti recipe will turn crisp up as it cools.

13. You can store and enjoy your homemade biscotti recipe for up to two weeks after you make them! Make the most of it and gorge!

An Authentic Italian Lasagna Recipe (rajiv tiwari)

An authentic lasagna recipe is hard to come by. Try out this recipe in your own kitchen and see how simple it is!

Ingredients:

* 800 g of canned tomato puree
* 400 g chicken mince
* 3 chicken sausages
* ? carrot, chopped finely
* ? celery stalk, chopped finely
* ? onion, chopped finely
* 400 ml of water
* 2 tablespoon of oil
* A glass of red wine
* 1 litre milk
* 30gr of butter
* 4 tablespoons all-purpose flour
* Salt to taste
* Pepper to taste
* 300 g of mozzarella
* 150 g of grated parmesan
* 9 lasagna noodles

Directions:

1. Heat the oil in a pan and add in the veggies for the lasagna. Allow it to cook for a few minutes.

2. Add in the minced chicken and sausages, constantly stirring until brown.

3. Stir in a glass of red wine and let it reduce to give the lasagna flavour.

4. Pour in the tomato puree and the water and mix well. Season with the salt and pepper and let it cook for around 2 hours on a low flame. Make sure the sauce doesn't burn and add water if required for the lasagna sauce.

5. Make a roux by melting the butter in a pan with the flour.


6. Transfer the roux to a separate bowl. Pour boiling hot milk on the roux while stirring to make the mixture melt.

7. Pour the milk back into the, add salt and bring it again to a boil again while stirring. Boil for the lasagna recipe till it's a thick creamy sauce.

8. Remove from the stove and cover tightly so that it doesn't dry out.

9. Start making the layers for the lasagna before you out it in to bake. Make the first layer by spreading a spoonful of tomato and white sauce right at the bottom.

10. Add a layer of the lasagna noodles on top to cover the sauces. Add another thin layer of the tomato sauce and white sauce, and then sprinkle some of the parmesan on top. Add a little mozzarella cheese as well. Keep layering all the components and repeating the steps for the lasagna. End with a layer of the noodles right on top with some cheese.

11. Cook the lasagna in the oven at 200?C for just under an hour till the cheese is nice and bubbly on top and slightly brown.

12. Your lasagna recipe is ready for everyone to enjoy!

Understanding the concept of Foccacia as a part of Italian cuisine (Jim Doyle)

I thought I had seen it all until I encountered their cuisine. Before my visit to Italy I had been relegated to simply reading about how good Italian cuisine was and seeing it in the movies. On my visit to Italy I was therefore keen to try and understand what the fuss was about anyway. One of the people I was with in Italy introduced me to Foccacia and I have to admit, ever since then I have never really been able to find anything better tasting. I therefore embarked on a mission to find out how this wonderful bread was made and how it became a part of the Italian culture from the start.

The word Foccacia actually has its origins from the Latin word 'focus' which simply means "hearth, place for baking". In the Roman days, Panis Focacius was a kind of flat bread that was baked on the hearth. It is thought that the recipe for this bread was actually thought out by the Greeks. However, many people associate the recipe with the Ligurian cuisine. Over time, it became apparent that the knowledge of the recipe spread and many people began to take to making this bread. A variation in the ingredients meant that as people moved from one place to another they would probably come across different recipes but all leading to a similar outcome.

Since there were many little towns on the coast of Liguria, it emerged that each town had a different manner of making the Foccacia based on the ingredients that were available to them. In some places, the bread was even considered to be some kind of cake. In some places it had with more softness owing to the oil and in other places it had biscuit-like hardness because of the Camogli. There were actually some places where the ingredients were totally different from the original recipe and the similarities with the original bread were very minimal.


I actually realized that in places like Genoa and Recco, the recipe for this bread is so different but the name is almost the same. The Foccacia that is made in these towns has a filling of cheese usually sandwiched between two layers of the dough that is almost paper-thin. There are parts of North Western Italy where the recipe for the preparation of this bread entails sprinkling of sugar onto the base of the bread. Also, there is usually an addition of honey, raisins and a shot of other ingredients that are sweet.

I learnt that across the whole of Italy, there are various formats in which the Foccacia exists and some of the various types include Barese which is found in places like Taranto, Brindisi, Bari and Lecce. There is also Alla Genovese which is very popular in Genoa and then there is Alla Barese which is mostly from the area of Bari.

Preparing the lovely Italian dessert panna cotta (Jim Doyle)

This dish comes from Piedmont, the Northern Italian region. Panna cotta is eaten all over Italy now where it is served with chocolate sauce, fruits, berries and caramel.

Recipe for preparing panna cotta served with fresh berries

Ingredients:

Whole milk - 1 c
Powdered unflavoured gelatin - 1 spoon
Whipping cream - 1 c
Honey - 1/3 c
Sugar - 1 spoon
Salt - 1 pinch
Assorted fresh berries - 2 c
Preparation: In a small bowl, place the milk. Over them sprinkle the gelatin. Let it stand for about 5 minutes so that the gelatin will soften. Into a heavy saucepan, pour the milk mixture and over medium heat, stir it till the gelatin gets dissolved but the milk should not boil, for about 5 minutes. Add honey, cream, salt and sugar. Stir till the sugar dissolves, for about 7 minutes. Remove it from the heat. Pour it into wine glasses and fill only to the half. Cool it slightly. Keep it in the fridge till it sets, for at least 5 hours. Over the top of the panna cotta, spoon the berries and serve.
Panna cotta - vanilla flavored
Ingredients:
Heavy cream - 1 c
Vanilla bean - 1
Sugar - 1/2 c
Unflavoured gelatin - 1 1/2 tsp
Whole milk - 1/2 c
Whole milk yoghurt - 1/2 c
Fresh mint and sliced strawberries for garnishing

Preparation: In a saucepan, place the cream. Cut the vanilla into two halves lengthwise. Take out the seeds using a knife, then into the saucepan add the pod and the seeds. Add the sugar. Over medium heat, cook the mixture, stirring occasionally. Then, discard the vanilla pod. In a bowl, pour the milk and sprinkle gelatin. Let it stand for 5 minutes till the gelatin softens. Into the hot cream mixture, stir the gelatin mixture. Once it is dissolved, stir in the yogurt. Divide it among ramekins and cover them using a plastic wrap. Refrigerate for 6 hours for the panna cotta to set. Dip the ramekins in warm water and invert onto a serving plate. Garnish the panna cotta with mint and strawberries if you prefer.


Espresso-flavored panna cotta

Ingredients:

Whole milk - 1/2 c
Gelatin - 1 1/2 tsp
Heavy cream - 1 1/2 c
Espresso powder - 1 tsp
Sugar - 1/4 c
Salt - 1 pinch
White and dark chocolate for garnishing - 1 bar each

Preparation: In a small saucepan, pour the milk and sprinkle the gelatin. Let it stand for a few minutes till the gelatin softens. Over medium heat, stir it for 2 minutes for the gelatin to dissolve. Add the espresso powder, sugar, salt and cream. Over low heat, stir it till the sugar dissolves, for about 3 minutes. Take it off heat and cool it. Into 2 martini glasses, pour the cream mixture. Cover it and refrigerate it, stirring every 20 minutes only on the first hour. Chill it for 6 hours. Before serving the panna cotta, grate both the chocolate bars and sprinkle on top of it.

Authentic Italian Lasagna Recipe That'll Always Leave You Craving For More (rajiv tiwari)

* 6 lasagna noodles
* 8 ounces ricotta cheese
* ? egg
* ? teaspoon salt
* ? pound sliced mozzarella cheese
* ? cup grated Parmesan cheese

Directions:

1. Cook the sausage, ground beef, onion, and garlic over medium heat until it's completely browned.

2. Add the crushed tomatoes, tomato paste, tomato sauce and water.

3. Season with sugar, basil, fennel seeds, Italian seasoning, 1 tablespoon salt, pepper, and 2 tablespoons parsley. Stir well until it's mixed thoroughly. Now simmer the mixture after covering for an hour. Stir occasionally.


4. Cook the lasagna in boiling water till al dente. Drain the cooked lasagna and rinse with cold water.

5. Mix the ricotta cheese with an egg, remaining parsley, and salt in a separate bowl.

6. Preheat oven to 375 degrees F (190 degrees C).

7. In a baking dish spread some of the meat sauce at the bottom of a baking dish. Arrange 3 lasagna noodles lengthwise over meat sauce. Spread a half of the ricotta cheese mixture on top of the lasagna noodles and a third of mozzarella cheese slices. Spoon some more meat sauce over the mozzarella layer and put some of the Parmesan cheese on top.

8. Repeat the layering and top with remaining mozzarella and Parmesan cheese.

9. Cover it with foil, but make sure the foil and cheese aren't touching.

10. Bake in preheated oven for 25 minutes. Remove the foil and bake for 25 more minutes.

11. Cool for 15 minutes before serving.
