Roasted Vegetable Soup

2 lb carrots, peeled
1/2 lb parsnips, peeled
1/2 lb turnips, peeled
3 Tbsp olive oil
1 onion, chopped
2 Tbsp chopped fresh thyme
4 c low-sodium chicken broth

1. CUT carrots, parsnips, and turnips into 3" x 1/2" sticks. Toss with 1 Tbsp oil on baking sheet. Bake in 450?F oven, stirring occasionally, 40 minutes.

2. HEAT 2 Tbsp oil in pot over medium heat. Add onion and thyme. Cook 4 minutes. Add roasted vegetables, broth, and 2 cups water. Simmer 15 minutes.

3. PUREE in blender (in batches). Salt and seasoning according to taste.

Selecting and Storing Fruit to Use In Summer Party Food Recipes (Twistson Snacks)

One thing we most look forward to in the summer is eating fresh seasonal foods, especially fruit. The colors, textures, and flavors of these juicy sweet goodies can make your summer party food recipes even better. But knowing how to select and store fruits properly can have some people scratching their heads.

While summer fruits can be eaten as is, used in salads, or to make smoothies, salsas, pies and tarts, their limited "shelf life" can be tricky. We pulled together a guide on selecting and storing these gems and have included some great party snack food recipes using fruit.

Let's take a look at the more popular, or common summer fruit choices. While most fruits are available year-round thanks to global shipping, when describing peak availability and freshness, summer fruits are those that are considered 'in season' from mid-June to late September.

Blackberries: Choose berries that are firm and plump, then store at room temperature or refrigerate in a single layer. These need to be used within a day or two. Wash when ready to eat.

Cherries: The stems should be flexible and green. The fruit should not have any splits, or any soft spots. They can keep at room temperature for several days, but will last longer when refrigerated. Do not remove the stems, as this will cause rapid deterioration.

Honeydew melon: Look for smooth green-ish skin and the absence of bruises. If the melon is not quite ripe, keep it in a paper bag at room temperature for 2-3 days. Once ripe, wrap in plastic and refrigerate for up to 5 days.

Mangoes: Mangoes should have a yellow- red skin and should yield a bit when pressed. The smaller ones are typically better. Store mangoes at room temperature.

Peaches: These should have a noticeable sweet scent. Select peaches that have some give, but are not mushy or hard. Leave the soft or bruised ones alone. They can keep at room temperature for a few days or for longer in the refrigerator.


Strawberries: Pick strawberries that have a good red color and the green stems in place. The smaller ones tend to have much better flavor. Keep them refrigerated in a single layer for up to two days.

Watermelon: A ripe watermelon will give a bit to pressure at the stem end and will have a sweet scent. Store these at room temperature for 2-3 days, but refrigerate after cutting.

Here are some simple party food recipes using fruit:

Mango-Peach Salsa

2 peaches peeled & diced

1 mango peeled & diced

1/2 cup chopped red onion

1 jalapeno, seeded, finely chopped

1 tsp fresh lime juice

1 Tbs vegetable oil

1/4 cup chopped fresh cilantro

Salt and pepper

Toss peaches, mango, onions, jalapeno, lime juice, olive oil and cilantro together. Season with salt and pepper and refrigerate at least one hour before serving.

Chicken Salad with grapes

1 ? pound chicken tenders

5 cups water

1 ? cups chicken broth

1/3 cup plain yogurt

1/3 cup mayonnaise

1 Tbs Dijon Mustard

1 cup seedless grapes

1 Tbs dried tarragon

Salt and pepper

Boil chicken tenders in water and broth, then dice.

Cut grapes in halves or quarters according to preference

Combine mayonnaise and yogurt, Dijon mustard, tarragon, salt, and pepper.

Add chicken and grapes

Serve on croissants or rolls.

* El extra-virgin olive oil

* 1/3 Pound large shrimp, peeled, deveined and cut in half
* 1 Teaspoon fresh lemon juice
* Teaspoon grated lemon peel
* Tablespoon chopped parsley

Directions:

1. To begin, your pasta recipe, must first preheat the oven to 375 degrees F..

(2) In a large ovenproof pan the tomatoes with olive oil and thyme, and salt and pepper stir. Roast the tomatoes for about until beginning to Brown and break their skins.

3) In a separate pot cooking you cook the pasta al dente in salted boiling water and drain. Make sure that you won't for long if you want a perfect pasta recipe.

4. Add in the cream, tomatoes and simmer. Over a moderate flame, mashing gently Cook the tomatoes.

5. Prawns add and simmer have again cooked up completely for the pasta recipe.

6. Add salt and pepper and the noodles, and lemon juice in the Pan and mix well until the recipe is coated noodles with the sauce.

7. Add the lemon zest and parsley and mix again.

8. Transfer the pasta recipe on warm plates and serve.

Ingredients:

* 4 Teaspoons olive oil
* 2 large garlic cloves, chopped
* 1/3 Of Cup dry white wine
* Teaspoon of dried thyme
* Dried hot pepper flakes
* 1 Cup crushed tomatoes in cans
* Cup bottled clam juice
* Salt to taste
* 1/3 Pounds chopped clams
* 4 Tablespoons chopped parsley
* Ground black pepper to taste
* 1/3 Pound pasta

Directions:

1. Start your perfect pasta recipe, now put the oil in a large skillet and heat over a low flame.

2. Add the garlic and Saut for about a minute.

3. Stir wine, thyme and red pepper flakes, so that the mixture simmer. Cook until the wine for around 5 minutes has reduced.

(4) Add in tomatoes, clam juice, and salt. Increase the flame of to medium and simmer.

5. Stir hold this until the sauce for your pasta recipe has thickened.

6. Add the mussels and continue boiling until the mussels are cooked.

7 Add in parsley and pepper, and keep stirring for a pasta recipe for a perfect consistency.

8 Salted Cook, Cook the pasta in boiling water until al dente.

9. Toss it with the sauce and your pasta recipe is ready to serve!

Directions:

* 1 small onion, halved and cut into 1/4-inch-thick wedges
* 2 bell peppers (red, yellow, green, or a mix, ribs and seeds removed), cut into 1/4-inch-wide strips
* 6 garlic cloves, minced
* 2 tablespoons rice vinegar
* 2 tablespoons soy sauce
* 1 1/2 cups fresh basil leaves, larger leaves torn in half
* Cooked white rice, for serving (optional)

Directions

Pat chicken pieces dry with paper towels. In a medium bowl, toss chicken with cornstarch until coated; season generously with salt and pepper.

In a large wok or nonstick skillet, heat 2 teaspoons oil over medium-high. Cook half the chicken, turning once, until browned, but not completely cooked through, 2 to 3 minutes total. Transfer to a plate. Repeat with another 2 teaspoons oil and remaining chicken. Transfer chicken to plate. Set aside. Wipe out skillet with a paper towel.

To skillet, add remaining 2 teaspoons oil, onion, and bell peppers; cook over medium-high heat, tossing often, until beginning to brown, 3 minutes. Add garlic; cook until fragrant, about 1 minute.

* 350 g package whole-wheat pizza dough
